They’re not quite jerky, but they’re incredibly versatile. Use them in sandwiches, wraps, on top of salads, pasta, or any way you like!

This recipe is not only delicious but also oil-free and gluten-free. We’ll walk you through each step, from rehydrating the soy curls in vegetable broth (or hot water) to getting that perfect pepperoni flavor with a blend of tomato paste, nutritional yeast, smoked paprika, fennel seeds, onion powder, garlic powder, red pepper flakes, oregano, basil, salt, pepper, and a touch of coconut sugar.

We’ll show you the best way to coat the soy curls with the seasoning and then air fry them to perfection.

And don’t forget the nutritional breakdown! These soy curls are not only low in calories but also high in protein and fiber, plus they’re a good source of iron and potassium.

Chris’ Pepperoni Flavored Soy Curls (Air Fryer)

Yields: 4 servings

Prep time: 15 minutes

Cook time: 10-12 minutes

Ingredients:

  • 1 cup dried soy curls
  • 1 cup warm vegetable broth (for soaking)
  • 2 tablespoons nutritional yeast
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon fennel seeds, crushed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes (adjust to your spice preference)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon Liquid Aminos (or soy sauce)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon coconut sugar

Instructions:

  1. Rehydrate the soy curls: Place the dried soy curls in a bowl and pour the vegetable broth over them. Let them soak for about 10 minutes, or until they are softened. Gently squeeze out any excess liquid.
  2. Prepare the pepperoni seasoning: In a medium bowl, combine the nutritional yeast, tomato paste, smoked paprika, fennel seeds, garlic powder, onion powder, red pepper flakes, oregano, basil, salt, pepper, and coconut sugar. Mix well.
  3. Coat the soy curls: Add the soy curls to the bowl with the seasoning mixture. Toss until the soy curls are evenly coated.
  4. Add soy sauce and vinegar: Drizzle the soy sauce or tamari and apple cider vinegar over the soy curls, and toss again to combine.
  5. Air fry: Preheat your air fryer to 400°F (200°C). Arrange the soy curls in a single layer in the air fryer basket, ensuring they are not overcrowded. Air fry for 10-12 minutes, shaking the basket halfway through, until the soy curls are crispy and golden brown.
  6. Serve: Enjoy these pepperoni-flavored soy curls on their own as a snack, in sandwiches, wraps, salads, or as a pizza topping.
