Oil-Free Classic Vegan Blueberry Pancakes

Ingredients:
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 ½ teaspoons baking powder
- ¾ teaspoon baking soda
- ¾ teaspoon salt
- 2 cups plant-based milk (such as almond or soy milk)
- 2 ½ tablespoons apple cider vinegar
- 1 ¼ teaspoon vanilla extract
- Optional: 3 tablespoons unsweetened applesauce (for added moisture)
- 1 cup blueberries
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the plant-based milk and apple cider vinegar.
- Let it sit for a few minutes to curdle slightly.
