This recipe is of course 100% Vegan and 100% simple. You can also do this amazing minestrone recipe in a slow cooker or on the stove top but cook times will vary of course. In some minestrone recipes kidney beans are used as well so if you have those instead of the white cannellini beans don’t sweat it. Cooking soups in the instant pot is a great way to eat healthy especially if you are looking to lose some weight. Soups will fill you up but not fill you out! Especially this Minestrone soup recipe.
What you will need
- 4 cups veggie broth
- 2 cups water
- 1 cup small pasta
- 2 14 oz cans of white cannellini beans
- 1 28 oz can diced or crushed tomatoes
- 4 small carrots diced
- 3 stalks celery diced
- 1/2 medium onion diced
- 2 medium zucchini chopped
- 1 14 oz can turnip greens (can also use kale or spinach)
- 2 tsp minced garlic
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp Italian herb blend
- 1 tsp thyme
saute carrots, onions, and celery for 5-6 minutes
add in the rest of your ingredients into your instant pot
cook on manual for 5 minutes
let naturally release for 10 minutes
