We are going to be making some millet and maya coba beans today. These are two ingredients you may not be familiar with, but they are worth your time. This recipe is just something I whipped together but if you enjoyed it and want more videos like these please let me know.
- 2 cups millet
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup diced carrots
- 1 cup chopped mushrooms
- 1 cup white corn (frozen or fresh)
- 2 3/4 cups Vegetable stock or water
- 3 cloves garlic
- 1 teaspoon smoked hot paprika
- 2 teaspoons cumin salt and pepper to your liking
Saute onions, carrots, mushrooms, and garlic for 3-5 minutes.
Add in half of the spices, bell pepper, and a small amount of water or broth. Blend the ingredients and make sure there is no sticking or burning.
Once saute’d add the rest of the ingredients and cook for 20 minutes on the manual high setting.
Let manually release completely.
Serve and enjoy!
